Steak Night, Date Night

Austin and I have always been more of the “let’s stay in and cook together” type couple rather than go out to dinner for Valentine’s Day or any date night really. Some times we go out but I love cooking and it’s something that we enjoy together!

I’m sharing an easy way to make steaks at home that are juicy and tender and don’t require a grill!

Let’s get started!

Ingredients

    2 steaks (your choice of cut, we like ribeyes)
    2 Tbsp butter
    2 sprigs of rosemary
    Salt & pepper to taste

Directions

  1. Lay your steaks on a cutting board and season on both sides with salt & pepper. Let the steaks sit out and warm up as this is key for cooking them! I usually let mine sit out for 15 minutes.

The “BeST EvER” Two Meats & Three Beans Chili

Prep Time: 20-25 minutes Cook Time: 30-45 minutes Total: 1 hour

Difficulty: Easy

Ingredients

1 package Jimmy Dean HOT Sausage
1 package ground bison or beef
2 cans Great Northern Beans
2 cans Black Beans
2 cans Red Kidney Beans
1 can Corn Kernels
1 can Chili Beans with seasoning
1 can Diced Tomatoes
1 large Onion – small dice
3-4 cloves of Garlic – minced
1 Tbsp Red Pepper Flakes
1/2 Tbsp Garlic Powder
2 Tbsp Chili Powder
2 Tbsp Paprika (can use sweet, smoky or hot varieties)
Salt and Pepper to taste
Optional Toppings
Chopped Green Onions
Sour Cream
Shredded Cheese

Cookings Instructions

Greek Omelet with Spinach and Olives

You can eat this by itself, or have a side of toasted pita and/or Greek salad.  See the previous recipe for the latter.

For vegetarian, simply nix the lamb.  Just as tasty, and I added the lamb in anyway as a last minute decision.  Normally, I wouldn’t do this either.  I had the lamb here – it’s not something I’d run out to buy just for an omelet!

I prefer fresh spinach, which you would just wilt.  However, nothing says you can’t use frozen – simply thaw it and squeeze out as much water as you can prior to cooking.

Today’s Menu: Chopped Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Texas Toast (Light)

For Breakfast this morning I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread and I had a cup of Bigelow Decaf Green Tea. I topped the Scrambled Eggs with a sprinkle of Sargento Off the Block Sharp Cheddar Cheese and some Ortega Smoky Chipotle Taco Sauce. A few snow flurries blowing around this morning. Light Rain and 38 degrees for the day. Not a whole lot going on today. After Breakfast I went Meijer for a few items and stopped by the Bank and ATM. For Dinner tonight its Mom’s favorite, Chopped Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Texas Toast (Light).

Another Meatloaf, “Little Women” and Tailgating it in Rome

For once I shall do things the other way around, providing an intro to the recipe and ingredients first and writing my little ‘story’, the context, after.

If you want to spruce up an ordinary meatloaf, present it encased in pastry.

Instead of Beef Wellington, you can dub it Meatloaf Wellington.  I chanced upon this recipe on the internet and am providing a link below.  It’s in Italian but no worries – even if you don’t speak the language, everything is so straightforward, you’ll get enough of an understanding to get started right away.
