Guilt Free Chocolate Peanut Butter Cups

Allow me to please your sweet tooth. You know how some people have ‘A’ sweet tooth, well I have 32 sweet teeth. It is so hard for me to resit anything that is classified as a dessert. So, when I hear about something that is healthy and still actually tastes good, I’m all over it!

I have become obsessed with these Dark Chocolate Peanut Butter Cups that I’ve started making, I even got my husband on them too. They consist of 4 grams of sugar per cup, seriously only 4 g. These are way better than any store bought ones.

Healthy Blueberry Muffins

Treating yourself or wanting to eat something fattening doesn’t mean you actually have to. You can almost manipulate anything into a healthy version. I empathize on almost because there’s no such thing as “healthy” fried chicken, no way.

But…. you can make healthy muffins no problemo! See below for the ridiculously quick and easy recipe.

Grab:
2 cups gluten free flour or almond flour or coconut flour (use either one)
2 tbsp Olive oil
2 tbsp natural honey or any natural sweetener
4 eggs
Coconut oil (to grease the muffin tins)
1/2 tsp Himalayan salt
1/2 tsp Baking soda
Fresh or frozen blueberries. (if using frozen wait for them to defrost and let out most of the water).

Makes 10-12 muffins, depending on the size you make them.

Mix the dry ingredients together in one bowl. Mix the wet ingredients in another and then slowly fold the 2 mixtures together.

Recipe #64: Banana Nut Bread

Boy, do I love banana bread, especially when it has lots of chopped nuts. It is the perfect breakfast or snack. It’s also great to make it with overripe bananas because they’ll add so much sweetness, and you could probably cut down the amount of added sugar. These are also very nutritious because they contain 100% whole wheat flour.

This batter was so simple to make and only used one mixing bowl which made for an easy cleanup. I decided to make muffins because they take much less time to bake and they are pre-portioned for eating on the go.

They baked up so nicely and golden brown on top. They were quite moist and fluffy inside too. Most importantly, these muffins were very banana-ey. I like the touch of toasting the walnuts before mixing into the batter, it gave a little more nuttiness (as well as a little crunch)…
